At 11.3 Brix, and I'm expecting it to drop to below 1.000, it should well end up at around 6% . . . Evil stuff indeed. Although I hhave suplimented the Tannin Levels, I will be adding some malic acid once I have measured the acidty of the juice so that I know how much to add. . . but this can be added at the end of fermentation.
